I love love love the fall. I love the colours. I love the blue sky and the cool crisp air. I love the FOOD!!!
Fall foods to me are foods like stews, soups, chili’s, hot chicken pies and meatloaf and all those marvelous dishes I need to make in the oven or stove top. The foods I can’t make when it’s 40C outside!! I’ll take these kinds of “comfort” foods over BBQ any day!
What are some of your favourite fall foods?
In particular… I’m really, really, really fond of Pumpkin. Pumpkin Pie, Pumpkin Loaf, Pumpkin Cheesecake, and especially Pumpkin Soup. I am a big fan of making soup from scratch and creating my own recipes from time to time. The first time I tried this recipe was way back in the late 1990’s. It has been a smash hit ever since – a real crowd pleaser!! Don’t let the curry stop you from trying this, it’s very mild and the pumpkin is nice and smooth and oh so yummy!
Curried Pumpkin Soup by Shash
* 2 tablespoons butter or margarine
* 1 cup (1 small) chopped onion
* 2 large cloves garlic, finely chopped
* 1 1/2 teaspoons curry powder
* 1/2 teaspoon salt
* 1/4 teaspoon ground white pepper
* 3 cups chicken broth
* 1 can (15 oz.) 100% Pure Pumpkin (NOT pie filling)
* 1 can (12 fl. oz.) Evaporated Milk
Directions:
MELT butter in large saucepan over medium-high heat. Add onion and garlic; cook, stirring frequently, for 2 to 3 minutes or until tender. Stir in curry powder, salt and pepper; cook for 1 minute.
ADD broth and pumpkin; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 15 to 20 minutes. Stir in evaporated milk. Blend or Puree (in batches, if necessary, I use a pureeing wand so I don’t have to move the soup). Blend until smooth. Serve warm. 🙂
